From Cherry to Cup: The Journey of Coffee

Coffee passes through several distinct stages of picking, processing, and roasting before it becomes the drink people recognize.

Coffee does not begin as a brown bean. It starts as a bright red fruit, called a coffee cherry, that grows on a tree in a warm, hilly region near the equator. Farmers harvest the cherries by hand, walking through the rows again and again over several weeks. This is necessary because the cherries on one branch do not ripen at the same time, so workers must choose only the red, ripe ones and leave the green ones for later. This method, known as selective picking, is slow and expensive, but it produces better coffee than machines that strip every cherry from a branch at once, ripe or not.

Once the cherries are picked, they must be processed quickly, or they will spoil. Workers remove the outer skin and the soft, sweet pulp that surrounds the bean, using either water or the sun. In the washed method, the beans are soaked so that the fermentation of natural sugars loosens the remaining pulp, which is then rinsed away. In the natural method, the whole cherry is simply dried in the sun for several weeks, and the fruit shrinks around the bean like a raisin. Each method changes the final flavor: washed coffee tends to taste cleaner, while natural coffee is often fruitier and heavier. After drying, a thin, papery husk called the parchment is removed, revealing the pale green bean underneath.

The green beans are still not coffee as we know it; they have almost no smell and taste grassy. Roasting is what transforms them. In large, rotating drums heated to around two hundred degrees Celsius, the beans crackle, expand, and turn from green to golden to dark brown, releasing the rich aroma we associate with coffee. A roaster controls the temperature and time closely, because even one extra minute can push a batch from a pleasant medium roast into a bitter, burnt one. The chemical changes that happen inside the beans during roasting create hundreds of new flavor compounds that were not there before.

Finally, the roasted beans are shipped, ground, and brewed. Grinding breaks the beans into smaller pieces so that hot water can extract flavor and caffeine efficiently, and the ideal grind size depends on the brewing method: fine for espresso, coarse for a French press. When hot water passes through the grounds, it dissolves oils, acids, and other compounds, producing the dark liquid poured into a cup. From a red cherry on a distant hillside to the drink steaming in your hands, coffee passes through the hands of farmers, processors, roasters, and coffee shop workers, a journey that can take months and cross several countries before it finally reaches you.
